Every battle, make use of one of the Spirit's abilities and at the end they'll gain xp. You'll only be able to activate Zerock immediately with a battle, then Sleem when you feed it snakes, then later in the dwarven lands, Lina, and even later, the Reaper. They're easy to come by later on (once you hit the dwarflands) or when you have access to Sacrifice, but until then you really just have to check the right shops Knight's tent, Wizard's tower, and the Paladin's shop outside the graveyard.
